DELICIOUS – Put a Spin On Traditional Thankgiving Sides

Having holiday traditions is so important in our family.   Playing football on Thanksgiving morning, listening to Christmas songs while cooking dinner and going as a group to get our Christmas trees the day after turkey day are just a few.  Traditions are wonderful, and some are sacred, but this Thanksgiving don’t be afraid to stray a little from the traditional family menu.  Try these delicious dishes to stir things up a bit.

Orange Ginger Glazed Carrots

Ingredients

  • 1 (1-lb.) package baby carrots, thoroughly washed
  • 1 teaspoon grated orange rind
  • 1/4 cup fresh orange juice
  • 2 teaspoons butter
  • 2 teaspoons honey
  • 1 to 3 tsp. freshly grated ginger*
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions

1. Stir together all ingredients and 1 cup water in a medium saucepan over medium heat, and bring to a boil. Reduce heat, and simmer, stirring occasionally, 30 to 35 minutes or until liquid evaporates and carrots are glazed.
*1 tsp. ground ginger may be substituted.

Cornflake, Pecan and Marshmellow-topped Sweet Potato Casserole

Ingredients

SWEET POTATO FILLING:

  • 2 1/2 pounds sweet potatoes (about 5 medium)
  • 2 tablespoons butter, softened
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup 2% reduced-fat milk
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Vegetable cooking spray

CORNFLAKE, PECAN, AND MARSHMALLOW TOPPING:

  • 1 1/4 cups cornflakes cereal, crushed
  • 1/4 cup chopped pecans
  • 1 tablespoon brown sugar
  • 1 tablespoon melted butter
  • 1 1/4 cups miniature marshmallows

Directions

  1. 1. Prepare filling: Preheat oven to 400°. Bake sweet potatoes on a baking sheet 1 hour or until tender. Reduce oven temperature to 350°. Let potatoes stand until cool to touch (about 20 minutes); peel and mash with a potato masher.
  2. 2. Beat mashed sweet potatoes, 2 Tbsp. softened butter, and next 5 ingredients at medium speed with an electric mixer until smooth. Spoon mixture into an 11- x 7-inch baking dish coated with cooking spray.
  3. 3. Prepare topping: Stir together crushed cornflakes cereal and next 3 ingredients. Sprinkle over sweet potato mixture in diagonal rows 2 inches apart.
  4. 4. Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle miniature marshmallows in alternate rows between cornflake mixture, and bake 10 more minutes.

Spiced Pumpkin Rolls

Ingredients

4 teaspoon active dry yeast, or 2 envelopes
1/4 cup warm milk (110 degrees F)
5 1/4 cups all-purpose flour
1 1/2 teaspoon cinnamon
1 1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground cardamom
1/3 cup brown sugar
1 1/2 teaspoon salt
2 large eggs, room temperature
1/4 cup melted butter
1 3/4 cup pumpkin puree (15 oz can of pumpkin puree)
egg wash (1 egg lightly beaten with 1 tbsp of water)

Directions

  1. Adjust oven rack to middle position and heat oven to 200 degrees. When oven reaches 200 degrees, shut off.
  2. In the bowl of a stand mixer combine the milk and yeast and let rest 10 minutes until foamy.
  3. In a medium bowl whisk together flour, cinnamon, ginger, cloves, cardamom, brown sugar and salt; set aside.
  4. In a medium bowl, combine eggs, melted butter and pumpkin puree. After the yeast and milk have rested for 10 minutes, add the pumpkin puree mixture and mix with the stand mixer fitted with the paddle attachment until combined. Add 1/2 of the dry ingredients and mix on low until combined, about 30 seconds. Add the remaining dry ingredients and mix on low speed until combined, about 30 seconds. Remove the paddle attachment and fit the stand mixer with the dough hook. Mix with the dough hook on medium-low until smooth and somewhat sticky, about 3-5 minutes.
  5. Transfer the dough to a lightly oiled bowl, cover with plastic wrap and place in warm oven. Let rise until doubled in size, about 1 hour.
  6. After the dough has doubled in size, turn it out onto a lightly floured surface, cover with a kitchen towel and let rest for 10 minutes. Then shape into rolls or a braided loaf.
*To make a braided loaf, Lightly grease large baking sheet and set aside. Transfer dough to lightly floured work surface. Divide dough into 2 pieces, one roughly half size of other. (Small piece will weigh about 9 ounces, larger piece about 18 ounces.) Divide the large piece into 3 equal pieces. Roll each piece into 16-inch-long rope, about 1 inch in diameter. Line up ropes of dough side by side and pinch ends together. Braid the free ends together, pinching the braid closed at the end and tuck both ends under braid. Place braid on baking sheet. Divide smaller piece of dough into 3 equal pieces. Roll each piece into 16-inch-long rope, about 1/2 inch in diameter. Braid together, pinching ends to seal. Brush some of egg wash on top of large loaf and place small braid on larger braid.
*To make dinner rolls, lightly grease a 9×13 inch square baking pan. Divide into 18 balls (about 3 ounces each). To shape, take a piece of dough and start forming a round, smooth ball by pulling the sides to the center and pinching to seal. Place, pinched side down, on a counter and lightly cupping your hand around the dough ball, rotate your hand in small circles lightly rolling the ball around the palm of your hand and place in prepared baking pan.
  • After your dough is shaped, cover it loosely, and let it rise for another 1 ½ hours. Meanwhile, preheat your oven to 350 degrees F.
  • Brush the top of the bread lightly with the egg wash. Bake until golden brown and an instant read thermometer inserted in center reads 190 degrees, 30-35 minutes. Remove the bread from the oven and allow to cool on a rack.

Recipe Notes:
If you want to make the dough ahead of time and refrigerate until ready to bake:
After shaping rolls, wrap the baking sheet tightly in plastic wrap and refrigerate the shaped rolls overnight.
At least an hour before baking, remove from the refrigerator and allow to rise (still covered in plastic wrap). Bake as directed.
To freeze the dough, put the covered pan in the freezer until the unbaked rolls are frozen. Store frozen rolls in a heavy-duty resealable plastic bag.
To defrost, place them on a tray dusted with flour and cover them with lightly greased plastic wrap. Thaw overnight in the fridge or for about two hours at room temperature.
Proof and bake as directed.
Bread dough will keep in the freezer for up to a month; you can store it longer, but the yeast may begin to degrade and the bread may not rise as well.

Green Beans with Toasted Walnuts & Cranberry Vinaigrette

Ingredients

1/3 c. extra-virgin olive oil
1/3 c. minced red onion
3 Tb. plus 2 tsp. Champagne Vinegar
2 Tb. chopped fresh mint
1 1/2 tsp. coarse kosher salt
1 tsp. sugar
1/2 tsp. black pepper plus additional (for sprinkling)
1/3 c. dried cranberries
1 1/2 lb. trimmed slender green beans (such as haricots verts)
1/2 c. walnuts, toasted, chopped

Directions

Whisk first 6 ingredients and 1/2 teaspoon pepper in small bowl. Mix in dried cherries; set aside. DO AHEAD Vinaigrette can be made 1 day ahead. Cover; chill. Bring to room temperature; whisk before using.

Fill large bowl with water and ice; set aside. Cook green beans in large pot of boiling salted water until crisp-tender, 3 to 4 minutes. Drain. Transfer to bowl with ice water; cool. Drain. DO AHEAD Can be made 1 day ahead. Wrap in paper towels; enclose in resealable plastic bag and chill. Let stand at room temperature 1 hour before continuing.Toss green beans, walnuts, and vinaigrette in large bowl. DO AHEAD Can be made 2 hours ahead. Let stand at room temperature. Transfer to platter and serve.

 

A Gluten-free Quinoa Stuffing

Ingredients

  • 1 cup red quinoa
  • 1 cup white quinoa
  • 3 large sweet potatoes, peeled and diced
  • 1 large shallot, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 cup chopped pecans, toasted
  • 1/2 cup fruit juice sweetened cranberries
  • 1 tbsp cumin
  • 1 tsp red pepper flakes
  • 2 tbsp apple cider vinegar
  • Sea salt & pepper to taste

Directions

  1. Bring 4 cups of water to boil, adding your quinoa in and turning down to low. Let the pot simmer for 8 – 10 minutes, turning off the heat when the water is absorbed. Leave the pot covered and let it stand for while the rest of the meal cooks.
  2. Preheat the oven to 400 degrees F.
  3. Toss your diced sweet potatoes, shallot and garlic in a large bowl with olive oil and a bit of salt and pepper. Grease a baking sheet with cold pressed olive oil spray and spread the potato mixture out. Roast for 15 – 20 minutes, flipping the potatoes over half way through.

COLOR PALETTE – Pumpkin Orange

With today being Halloween, I thought it would be fitting to give some love to pumpkin orange.  This color may sound intimidating, but don’t let it scare you.  Whether you use it in your accessories or go for it and paint a wall or two, orange is the hot new color and can be a beautiful and warm.

DELICIOUS – Pumpkin Heaven

I love the smell of pumpkin.  It can mean only one thing….Fall has arrived!  Here are two great recipes that will warm your home and lift your spirits as the temperatures start to fall outside!

Cindy’s Famous Pumpkin Bread

2 C sugar
1 C Vegetable oil
3 eggs
2 C pumpkin
3 C flour
1/2 t salt
1/2 t baking powder
1 t baking soda
1 t each cinnamon, nutmeg and cloves

Directions

Preheat oven to 325
Mix all dry ingredients – set aside
Mix oil and sugar
Add eggs one at a time
Beat in pumpkin
Mix dry ingredients in
Bake approx 60 mins
Makes two loaves

Skinny Pumpkin Spice Latte

Ingredients:

  • 1 1/2 cups fat free milk
  • 2 tbsp pumpkin butter
  • 2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • 2 tsp sugar or sugar substitute (to taste) 
  • 1/4 cup of espresso (or 1/2 cup strong brewed coffee works)
  • fat free whipped topping
  • pumpkin pie spice for topping

Directions:
In a small pan combine milk, pumpkin butter and sugar and cook on medium heat, stirring, until boiling. Remove from heat, stir in vanilla. Using an immersion blender, blend until smooth (or whisk well with a wire whisk)
Pour into two mugs, add the hot espresso and top with fat free whipped cream and a dash of pumpkin pie spice on top.
